Perliss The Ravens Cabernet Sauvignon 2012 Calistoga

Last month we hosted about ten wineries alongside some of my local friends who oversee wine programs in Napa Valley restaurants and we collectively tasted about 30 wines together. Of all of those wines, this 2013 Cabernet stood out. This 2012 Cabernet is made by Aaron Pott and is the first vineyard that he was able to plant exactly according to his specifications. It is a 3-acre vineyard planted solely to Clone See Cabernet and is in a small knoll just north of Bennett Lane in Calistoga. We loved this Cabernet. It is full-bodied but with great balance and focus. On the palate, it offers blackberry with notes of chocolate and toffee. It’s rich with excitement on the palate and into the finish. The Perliss family has lived on this property for 25 years and thanks to Aaron, is now in the wine game making a great Cabernet. 300 cases were produced.
